Cosmic Coffee Company is small independently owned specialty coffee roasting company located in Santa Clara CA. They are not a retail coffee shop, They are something else. Their brick and mortar location is run like a speakeasy and the private coffee bar is open for tasting by word of mouth. Cosmic Coffee Co. sells freshly roasted coffee directly to customers at local farmer’s markets and through their online shop.
Cosmic Coffee Co. does not stock roasted coffee for more than a week. They keep their coffee fresh by roasting 3 days a week. “Our goal is to provide you with the most freshly roasted coffee possible.” Coffee sold at the farmer’s market is roasted on Thursdays and Fridays. Coffee sold through our online shop is roasted Wednesdays, Thursdays and Fridays. Online orders are fulfilled accordingly to the roasting schedules.

Cosmic Coffee Company was started in 2009 in Honolulu HI and relocated to Santa Clara CA in 2012. All our coffees are specialty graded and imported through Organic Products Trading Company and Royal Coffee. We also purchase directly from coffee farmers whenever possible. We seek out responsibly grown coffees from farmers who care for our mother earth, their communities and the quality not quantity of their coffees. All roasted coffees are labeled accordingly: Organic, Fair Trade, Certified Rain Forrest Alliance and/or Smithsonian Migratory Bird Center certified as bird friendly shade grown.
We believe in paying a living wage to the farmers. They work incredibly hard in some very harsh conditions. In order for us to succeed we need to make sure the farmers succeed. We support the Café Femenino Foundation and purchase green coffee from Café Femenino farms. Carlos, the man behind the coffee, is into the science of coffee and expresses his passion for it though the art of roasting and brewing. ” I am always learning everything coffee keeping what is useful discarding what is not. From there I develop my skills methodically with science and artistically with intuition.” He takes the time to develop a unique roast profile for every varietal of coffee he roasts. This often means roasting several test batches of the same beans. Coffee beans have different sizes, density and moisture content depending on the variety, age, where and how the beans were grown and processed. Keeping the profile consistent from batch to batch can also depend on the weather; heat, humidity and cold temperatures can also affect the roast. This is just the basics but you get the idea. In 2009 Carlos was the first barista in the state of Hawaii to become an International Academy of Specialty Coffee certified barista. He started roasting coffee in 2007. He continues to educate himself in all things coffee; earning certificates from The Specialty Coffee Association in such areas as Golden Cup Standards, Green Coffee Roasting, Craft Roasting and Identifying Defects in Green and Roasted Coffee. Carlos also handcrafts the water for the Dark Matter Cold Brew. He entirely build-out the coffee bar by hand from scratch including the carpentry, plumbing and electrical. Cosmic Coffee Co. uses only specialty graded green coffee.
The quality of specialty green coffee is rated according to a grading system and the presence of molds or mycotoxins will significantly lower the score. Coffee farmers who grow for the specialty coffee industry know this very well. Specialty green coffee stands for added attention to every detail from growing to harvesting to packaging. This is very important to the specialty coffee industry. It goes without saying this raises the premiums for these specialty coffees vs commodity coffees.
The idea of moisture fluctuations during storage has been known for many years. Our specialty green coffees are packaged in hermetic bags inside the jute bags to maintain good quality coffee during shipping and storage. Specialty green coffee must be protected from changes in moisture content and microorganisms such as fungi. Moisture content and temperature are among the most critical factors that affect the quality of green coffee during storage. The normal harvesting moisture content for specialty coffee farmed in the tropics is 11% to 12%. The key to successful hermetic storage is air-tightness and control of moisture content. Cosmic Coffee Co.’s warehouse facility has insulated walls, ceiling and climate control to protect from development of mycrotoxins.

Café Femenino is a social program for women coffee producers in rural communities around the world. More than 1,500 women in Bolivia, Colombia, Dominican Republic, Guatemala, Mexico and Peru are active in the project to achieve empowerment, build social and support networks, and earn incomes through the production and sale of the Café Femenino Coffee. The success of the Project initiated the creation of The Café Femenino Foundation, which provides grants to select programs and projects that enhance the lives of women and their families in coffee growing communities around the world.

San Cristobal Coffee Importers has been involved in coffee production since 1993. San Cristobal Coffee Importers was incorporated in 1996 to provide international market access for small holder coffee farmers in Nayarit, Mexico.
