Cosmic Coffee Company is celebrating over 12 years at their Santa Clara California roastery. From their humble beginnings in Honolulu Hawai’i in 2008 with a one pound Sonofresco roaster, they didn’t even have a name until 2009. Today Carlos roasts on two Diedrich roasters, the IR5 and IR2.5 manual roasters. Early in the pandemic they closed the doors to their coffee Speakeasy to concentrate on online orders. Cosmic Coffee Co is a minority owned and operated small family business (seriously we’re just three people). Head roaster and co-owner Carlos is an immigrant from Mexico and his wife Jolynn is a certified tea specialist. He roasts only specialty grade coffees in small batches.

Why is Cosmic Coffee special?

Cosmic Coffee is special because it has been a labor of love and passion for over 12 years. It’s the attention to detail and authenticity we demand of ourselves that shows through in every product we offer. The majority of our coffees are organic, shade grown, friendly to birds, rain forest alliance and direct trade. Cosmic Coffee Co. roasts only specialty grade coffees, uses the latest generation plant based renewable resource biodegradable coffee bag packaging, gives the spent grinds to local gardeners, recycles/sterilizes and reuses the glass bottles. We seriously bust our ass every day to bring you exceptionally fresh coffees. We think that’s pretty special.

Carlos, the man behind the coffee

Carlos, the man behind the coffee, is into the science of coffee and expresses his passion for it though the art of roasting and brewing. He takes the time to develop a unique roast profile for every varietal of coffee he roasts. This often means roasting several test batches of the same beans. Coffee beans have different sizes, density and moisture content. All this depends on the variety, age, where and how the beans were grown and processed. Keeping the profile consistent from batch to batch can also depend on the weather. Heat, humidity and cold temperatures can also affect the roast. This is just the basics, but you get the idea.

In 2009 Carlos was the first barista in the state of Hawaii to become an International Academy of Specialty Coffee certified barista. He started roasting coffee in 2007. He continues to educate himself in all thing’s coffee. Carlos has earned many certificates from The Specialty Coffee Association. Such as Golden Cup Standards, Green Coffee Roasting, Craft Roasting and Identifying Defects in Green and Roasted Coffee. Carlos also handcrafts the water for the Dark Matter Cold Brew. Founded in 1978 and located in Oakland CA they serve the international roasting community. Cafe Femenino Women Coffee Growers

Café Femenino  is a social program for women coffee producers in rural communities around the world. More than 1,500 women in Bolivia, Colombia, Dominican Republic, Guatemala, Mexico and Peru are active in the project. It has helped these women to achieve empowerment, build social and support networks, and earn incomes through the production and sale of their coffee. The success of the Project initiated the creation of The Café Femenino Foundation. This foundation provides grants to select programs that enhance the lives of women and their families in coffee growing communities around the world.

Daterra a certified Rainforest Alliance coffee farm

Daterra Coffee, Quality and sustainability is their passion. Technology, research and attention to the environment during coffee production have led Daterra to be known as one of the best coffee producers in the world. Daterra coffee blends have been the choice of barista champions around the world. Daterra was Brazil’s first sustainable coffee farm. In 1999 Daterra became ISO 14001 certified and in 2003 became Rainforest Alliance certified, another first for Brazil.
