Founded in 2008 in Honolulu, Hawai‘i, Cosmic Coffee Company began with a one-pound Sonofresco roaster and a passion for exceptional coffee. We relocated to Santa Clara, California in 2012, where we’ve been roasting specialty-grade coffee ever since.
We’re a small family-owned business — just three people committed to quality over quantity. Carlos, our head roaster and co-founder, started roasting in 2007. In 2009, he became the first barista in Hawai‘i certified by the International Academy of Specialty Coffee. He continues to deepen his expertise through certifications from the Specialty Coffee Association, including Golden Cup Standards, Craft Roasting, and Green Coffee Defect Identification.
Jolynn, co-founder and certified tea specialist, brings over 20 years of culinary experience to our handcrafted organic teas and tisanes. Every blend is an original creation, made with care and sustainability in mind.
We roast only specialty-grade green coffee, sourced ethically and stored in our climate-controlled facility. Our green coffee beans are packaged in hermetic bags to preserve freshness during shipping and storage. We also use biodegradable, plant-based packaging, donate spent grounds to local gardeners, and reuse sterilized glass bottles — because sustainability matters.

The Science and Soul Behind the Roast
Carlos, the heart and hands behind Cosmic Coffee Co, approaches roasting with both scientific precision and artistic passion. Every varietal receives a carefully developed roast profile, often built through multiple test batches to account for variations in bean size, density, moisture content, and origin. Even factors like weather, heat, and humidity play a role in delivering consistent, high-quality roasts.
His journey began in 2007, and by 2009, Carlos became the first barista in Hawai‘i certified by the International Academy of Specialty Coffee. Since then, he has deepened his knowledge with certifications from the Specialty Coffee Association, including:

Carlos doesn’t just roast — he builds from the ground up. He handcrafted the entire Cosmic Coffee bar, including the carpentry, plumbing, and electrical, and he even formulates the custom water used for the iconic Dark Matter Cold Brew.

San Cristobal Coffee Importers has been involved in coffee production since 1993, and was formally incorporated in 1996 to provide international market access for smallholder coffee farmers in Nayarit, Mexico.
