This exceptional coffee comes to us from Roberto Rene González and his farm Finca Liquidámbar in Guascotoro, San José, Honduras. A natural honey process 100% Arabica coffee; it’s a blend of bourbon, cataui and pacas. Pacas is a dwarf arabica coffee plant discovered in 1949. It is a relative of the bourbon.

This is a light to medium roast. We approached the roast similar to our organic Java. Our favorite way to brew this roast profile is with a V6 pour over. Letting it rest 3 to 5 days is the sweet spot. We use a 17 to 1 brew ratio with a coffee target that will hit a coffee concentration of 1.25% with an extraction yield of 19%. The medium acidity gives a honeycomb like sweetness and syrupy mouth feel.
